How to make shallot salt

Idea to transform shallots from your vegetable garden into a consumer product
 
After the harvest season or simply when a particular Alliaceae crop is ready for harvest, one may find themselves with an abundance of raw material.

Kevin Prescott presents his techniques and recipes for transforming this top-quality raw material to promote improve its self-sufficiency.

In this article, Mr. Salut! shows us how he practices food self-sufficiency by transforming shallots from his vegetable garden into shallot salt.
 
 
 
 
1. What can we do with... The Shallot?
 
1B - Shallot salt!
 
 
Ingredients :
 
  • 10 cups of shallot leaves (greens).
  • 1 kilogram of salt (pickling salt, if you are fermenting)
* Produces coarse salt. To obtain fine salt, process in a food processor until it becomes a fine powder. Salt is at approximately 50% concentration. Useful for knowing the exact amounts for seasoning and fermentation.
 
 
 
Directions :
 
  • Wash.

  • Cut shallots' leaves into 1/4 inch chunks.

  • Preheat the oven to 250 °F (120 °C).

  • Put the pieces of leaves into a food processor until a paste/cream forms.

  • Mix the salt into the paste/cream.

  • Spread on two baking sheets lined with parchment paper.

  • Dry in the oven for 90 minutes and mix every 15 minutes (If it is not completely dry, continue until it is dry).

  • Allow to cool.

  • Grind in a coffee grinder.

  • Transfer your shallot salt into containers.
