STEP-BY-STEP DIRECTIONS

CAKE
Preheat the oven to 350°F
(175°C).
Grease a 9 x
13-inch pan or two 9-inch round
pans.
In a small
saucepan, bring the dates and
water to a boil. Reduce the heat
and simmer for about 5 minutes,
or until the dates begin to
break down. Allow to cool to
room temperature.
In a
bowl, using an electric mixer,
cream the butter.
Gradually add the sugar, beating
continuously, then mix in the
egg and vanilla.
In
another bowl, combine the flour,
baking powder, baking soda, and
salt. Gradually add the dry
ingredients to the butter
mixture, alternating with the
date mixture.
Stir in the
pecans.
Pour the batter
into the prepared pan(s). Bake
for 35 to 45 minutes, or until
the cake feels firm to the
touch.. |
